If there’s a food that I loooove, it’s pickles! I’m all about that acid! I love anything pickled, but cucumbers are my favorite. Particularly, bread and butter pickles, a sandwich isn’t complete without some bread and butter pickles on the side. Of course, pickles are even better when they’re fried! My gluten free fried pickles are actually baked, making them healthier than the traditional fried pickled. But they’re just as crispy and delicious without all the fat!
When it comes to gluten free breading I always use the Better Batter Seasoned Flour. It’s got an irresistible taste, so you don’t have to add any spices! I made these gluten free fried pickles, the same way I make my oven fried calamari. It’s the key to baking your fried favorites. Once you try my method, you’ll never go back!
Part of what makes fried food so crispy is all the fat on the outside. It’s true, fat makes everything more delicious! But I find deep frying at home scary. I’m always afraid I’ll burn the place down. Instead, I use my secret ingredient, pan spray! I heavily grease a sheet pan with the fatty spread, add the breaded pickles, and then spray the top of the pickles. This way, there is an even layer of fat on the top and bottom of the pickles. Half way through baking I just give them a flip to ensure a perfectly even crisp!
- Bread and Butter Pickles
- Butter Milk
- Season Better Batter Flour
- Pan Spray
- Roll the pickles in the seasoned flour
- Dip in the buttermilk
- Roll in flour again
- Place on a greased baking pan
- Spray a layer of fat on the top of the pickles
- Bake at 375F for 15-20 minutes flipping half way through
