I love chocolate as much as the next chocoholic. However, when it comes to spring desserts, I am all about the fruit. The natural sweetness in fruits create the perfect desserts! This gluten free peach berry cobbler could not be easier. In fact, the recipe is filled with some staples always found in my house; canned peaches, fresh berries, and Better Batter Biscuit Mix.
Peach Berry Cobbler
I know what you’re thinking. Why are you using canned peaches in the spring time?! Well, because I love canned peaches. And this way I can enjoy my peach berry cobbler all year! When making a cobbler with fresh peaches you often have to add a lot of sugar to help break down the peaches. I buy the No Sugar Added Canned Peaches, I use peach juice in my cobbler. This way I don’t have to add any sugar to my filling. I just add a touch of coconut palm sugar to my biscuit mix and I’ve got on perfect dessert! Plus, less sugar in the cobbler means you can pile more ice cream on top!
- 1 14.5oz Can Peaches (No Sugar Added)
- 6 oz Raspberries
- 6 oz Blueberries
- 3 Tbsp Better Batter All Purpose Flour
- 1¼ Cup Better Batter Biscuit Mix
- 1 Tbsp Coconut Palm Sugar
- ½ Cup Buttermilk
- Combine fruit with AP flour
- Spread in a 8" pan
- Mix remaining ingredients
- Form until balls and flatten on top of fruit
- Bake in 400F oven for 20-30 minutes
