Whenever I have leftover shredded chicken this recipe is a must! Repurposing leftovers is the perfect way to save money without cutting out on flavor. Using yogurt instead of the traditional mayo really lightens up the dish. Not to mention, Stonyfield Greek Yogurt adds, even more, protein to this healthy salad.

- 2 Cups Shredded Chicken
- 2 Tbsp Minced Onion
- ¼ Cup Minced Celery
- ½ Cup Chopped Walnuts
- 1 Diced Small Green Apple
- 1 tbsp Minced Parsley
- 1 Tsp Apple Cider Vinegar
- ⅔ Cup Stonyfield Greek Yogurt
- Mix all ingredients
- Season with salt and pepper
