Grilled rib eye, sweet tomatoes, red onions, and arugula make for one light and delicious dinner. We’re not big salad eater in my house, but this healthy steak salad is always a hit! Perfect warm nights spent around the grill.
Working in a kitchen many meals are eaten standing either over a garbage can or if you’re lucky, over a cutting board. Cutting board dinners have become very popular even when we’re cooking at home. Why dirty two plates when you can eat directly over the cutting board? This is the very first meal my boyfriend ever made for me, our first date. Well, if you can ignore the other staff members eating it, it was a date. We now often recreate this meal from the comfort of our home. And it’s much more romantic when you’re not surrounded by other sweaty cooks.
Healthy Steak Salad
When it comes to dinners, I believe less is more. I’m all about less ingredients and bold flavors. Since the main component of this salad is steak, getting the best is important. For me, that means Certified Angus Beef®! Really any cut of beef would work, but I love a good rib eye! When all that fat melts into the meat? Yes please! It’s my idea of a perfect date night dinner. Sitting by the fire, cooking a perfect mid rare steak, tossing a quick salad, and eating right off the cutting board. Summer nights don’t get much better!
- 1 Rib Eye Steak (8-10oz)
- 2 Tablespoon Balsamic Vinegar
- ½ Teaspoon Dijon Mustard
- ⅓ Cup Olive Oil
- ¼ Cup Red Onion
- ½ Cup Cherry Tomatoes
- 1 Cup Arugula
- Grilled steak to desired temperature
- Whisk together vinegar, mustard, and oil
- Add the vegetables to a small bowl
- Dress the salad and season with salt
- Top salt with salad
