Shrimp Scampi in the microwave? Sounds too good to be true? Well, it’s not! And no I didn’t use any weird ingredients. Dried gluten free spaghetti, fresh tomatoes, fresh shrimp, fresh garlic, lemon juice, butter, and parsley. The same ingredients you’d use on your stove top. But this microwave shrimp scampi takes less time and effort!
All you need is an M-Cuisine Cooking Set from Joseph Joseph. The cooking set in an all is one container. The large base is perfect for cooking rice or pasta. The middle steamer makes healthy seafood, meats, and veggies. While the top griddle layer is great for bacon or more veggies! I know, sounds weird and space age to cook at that in the microwave? I thought the same thing! I was very skeptical of this cooking method. Microwave shrimp?! It’d be rubbery and gross, right? Wrong! It was absolutely perfect! Cooking gluten free spaghetti on the stove top requires a bit of stirring to prevent everything sticking together. For my microwave shrimp scampi, I just broke the spaghetti in half, put it in the microwave, and walked away. It does not get easier!
I love seafood, but as a mentioned in my Sweet and Sour Salmon post, my boyfriend is allergic. I don’t like cooking two dinners, so I love that this is easy enough to make for lunch! I make one portion, but you could easier double the recipe for a date night dinner. Trust me, everyone will love this microwave shrimp scampi!
- 1 Serving Gluten Free Spaghetti (About ⅙ a Box)
- 2 Garlic Cloves, Sliced
- 5 Peeled and Deveined Shrimp
- 8 Cherry Tomatoes
- 1 Tbsp Butter
- 1 Teaspoon Lemon Juice
- 1 Teaspoon Parsley
- Break spaghetti in half, and place in base of cooker
- Cover with two cups of water, season with salt
- Top with lid
- Microwave 10 minutes
- Add shrimp and tomatoes to steamer basket, season with salt
- Microwave and addition 4 minutes, until shrimp is cooked
- Add butter, lemon juice, and parsley
