Ooey gooey cheese, juicy pears, and fresh tarragon create one delicious gluten free quesadilla that will have you going back for bite after bite!
Guys I have fallen in love this week! Sure, I’d had quesadillas before, but lately, I just can’t get enough! Maybe that’s because I’ve discovered Missions Gluten Free Soft Tortillas. Growing up I loved soft tortillas. In fact, giving up soft tortilla was one of the hardest transitions to becoming gluten free. There are many options for gluten free wraps, but many crumble and just make me feel sad. Discovering these tortillas was a total game changer!
Most people say being gluten free must be so difficult. I disagree, I think being dairy free is way harder. I cannot imagine a life without cheese! What really makes this quesadilla a step above the rest is that I didn’t use just some shredded Mexican cheese blend, yuck! While I think cheese is a good part of a balanced diet, it still is high in calories. I’m not going to waste those calories on a cheese that is not delicious! Instead, I used a Cabot Alpine Cheddar. It’s got a punch of flavor and melts to ooey gooey perfection! Since this cheese is so rich I cut that with some thin slices of canned pear and fresh tarragon. These fresh ingredients lighten up the quesadilla so you can eat even more slices!
- 1 Gluten Free Mission Tortilla, Cut in Half
- 6 Slices Canned Pear
- ¾ Cup Shredded Alpine Cheddar Cheese
- Pinch Minced Tarragon
- 2 Teaspoons Butter
- Heat butter in saute pan
- Add ½ tortilla
- Top with cheese, pears, and tarragon
- Top with second half of tortilla
- Griddle on both sides 3-5 minutes until golden brown
