I think if there’s one food everyone loves it’s breaded chicken. Everything from chicken nuggets, to chicken parmesan, and of course fried chicken; all such crowd pleasers. This recipe is probably the easiest dinner I made all week, and definitely the most delicious! The heavy amount of basil combined with lots of garlic helps keep this filling dinner feel fresh and light.
Instead of fully breading the chicken I just spread a layer of crumbs on the top and threw it in the oven for about 25 minutes, that’s all it takes for an easy no complaint dinner! I also added lots of onions to the crust, this helps keep the chicken super moist. Also because there are so many onions they provide a great texture allowing you to use less crumbs, so it’s a somewhat healthier crusted chicken.
When it comes to meals I’m generally a planner I like to know what I have to look forward to. As far back as middle school, everyday after school I’d call my mom and ask what we were having for dinner. I just needed to know! So you can bet in my house dinners are planned out. For this recipe, I got up in the morning spent 5 minutes cutting vegetables and herbs, topped my chicken with some breading, and threw in it the fridge. That night I just came home and popped it in the oven, perfect!
Now most meals I’m only feeding two people, but this recipes could easily be double for a family of four. I paired mine with some nice asparagus. I counted the breading as my starch for the night, and it worked we were both stuffed after dinner.
Parmesan-Basil Crusted Chicken

- 2 Chicken Breast
- ¼ Cup Gluten Free Bread Crumbs
- ¼ Parmesan Cheese
- 2 Tablespoons Basil, Chopped
- 1 Tablespoon Olive Oil
- ½ Small Onion, Chopped
- 5 Garlic Cloves, Chopped
- Season chicken breast with salt
- Combine remaining ingredients
- Top chicken with bread crumbs
- Bake at 375F for 15-20 minutes until cooked through
