Growing up my mom cooked us a dinner almost every night. With a full time job, my sister’s hockey schedule and my theatre schedule she still managed to cook us dinner. Looking back, I don’t know how she did it all! She has lots of easy and delicious recipes up here sleeve to make the busy nights easier. Microwave carrots are a technique I learned from her that has become a life saver in my house!

Spring is around the corner, and I am excited for all the spring produce. When it comes to spring the color green is always what comes to mind! After the dark Rhode Island winters seeing the grass turn back to bright green in the spring was always exciting. With our host Simple and Savory the #SundaySuppe tastemakers are sharing their best easy spring recipes. I thought this would be a perfect time to share my microwave carrots and peas!

A Few Recipe Tips:

  • Use baby carrots, having them all the same size helps them cook quickly and evenly
  • Make sure to use a microwave safe container with a lid
  • Never microwave complete frozen vegetables, it tends to explode and make a gross mess
  • While the carrots are cooking, cover the peas with warm water. This helps them thaw to avoid a mess.
  • Adding herbs helps to brighten the dish. I used parsley in this recipe but it’s also great with dill!

Ingredients
  • 2 Tablespoons Water
  • 10 Baby Carrots
  • 1 Cup Frozen Peas, Thawed
  • ½ Teaspoon Garlic Powder
  • 1 Teaspoon Parsley
Instructions
  1. Add water and carrots to microwave safe container
  2. Cover and microwave on high for 5 minutes
  3. Remove cover and add peas
  4. Microwave an addition 3 minutes or until hot
  5. Add remaining ingredients and season with salt and pepper
