Green Scrambled Eggs

Growing up in my house my mom always made green eggs and ham for breakfast on St. Patrick’s. I guess because of the festive green color? Because I’m pretty sure Sam I Am is not Irish. My mom would just add some green food color in our eggs and we’d be thrilled. Since we are talking about healthy green recipes for #SundaySupper this week I thought I’d give my mom’s tradition a healthy spin!

Just look at all the green! I’m not doctor, but, my guess this recipe is much healthier than the green eggs and ham we eat as kids. (Though as a kid I don’t think I ate any of the above foods). This is such a versatile recipe, you could easily adapt it any foods in your fridge. I love adding peas to help make the breakfast more filling. The flavors of the spinach and asparagus pair so nicely with the scrambled eggs. Finishing it with avocado gives the contrast of temperatures that I love in a dish!

Green Scrambled Eggs and Ham #SundaySupper

  • 2 Teaspoons Olive Oil
  • 2 Tablespoons Minced Onion
  • 1 Minced Garlic Clove
  • ¼ Cup Asparagus
  • ¼ Cup Frozen Peas
  • ½ Cup Baby Spinach
  • 2 Sliced Diced Canadian Bacon
  • 3 Eggs
  • 1 Tablespoon Milk
  • 1 Tablespoon Feta Cheese
  • ½ Diced Avocado
  1. Saute onion in olive oil until tender
  2. Add garlic and aparagus
  3. Add spinach, peas, and ham
  4. Whisk milk and eggs, season with salt and pepper
  5. Once spinach is wilted add egg mixture
  6. Cook until scrambled
  7. Top with cheese and avocado
