I’m a huge cookie monster, but that doesn’t mean I want to cheat on my diet. By now you know that I love using bananas to sweeten my cookies. With most recipes, like my Banana Bread Cookies, I recommend freezing and then thawing the bananas. This helps release more or their natural sugar.  However, sometimes I don’t have bananas in the freezer. With this recipe, I decided to try microwaving my banana. It had the same sweet outcome!

What gives chocolate their delicious chocolate flavor is the SoyNut Butter Chocolate Spread, one of my favorite products. I’m not nut free, but just love the SoyNut Butter products! What I particularly love about their Chocolate spread is how low sugar it is compared to the competitor products. Since bananas offer such a natural sweetness, I don’t want to add lots of refined sugar. SoyNut Butter chocolate spread is the perfect solution!

Ingredients
  • 1 Cup Chocolate SoyNut Butter
  • 1 Banana
  • 1 Egg
  • 1 Teaspoon Vanilla Extract
  • ¼ Teaspoon Salt
  • 1 Teaspoon Baking Soda
Instructions
  1. Microwave banana for 1 minute
  2. Mash well
  3. Add remaining ingredients
  4. Mix until smooth
  5. Scoop into 6 large cookies
  6. Bake at 350F for about 15 minutes
