Pork chops are always a hit in my house, they’re quick and easy to make and easily adapt to any flavor. My favorite way to prepare them? With pesto! These Pesto Pork Chops make for a delicious one pan dinner everyone will love!

Everyone loves pork chops, which is why #SundaySupper has dedicated a whole week to it! With our host, Grumpy’s Honeybunch, we are all sharing some delicious porky recipes! I don’t think I’ve met a pork chop I didn’t like, as long as it’s cooked right. Did you know pork doesn’t need to be cook through like chicken? Yes! There’s no need to kill it, I just cook mine to medium or medium well. Makes for one juicy and delicious meal!

I love pesto on anything, you really can’t go wrong with basil! You can either use store bought or homemade pesto, though I prefer to make my own. I love to marinade the pork chops in the pesto to really infuse the flavor. The best part? You can do this ahead of time, way ahead of time! If you read my review of bulk shopping you know I’m a big fan of freezer marinades. And these pesto pork chops is one of those recipes. When I buy pork chops I put them into ziplock bags with two chops each (Since there’s only two people in my house) I just add the pesto into the bag with the chops and throw them in the freezer. Then when I thaw them, they marinade themselves. How easy is that? Once thawed, I toss the other ingredients into the bag with the pork so they can marinate too!

I recently got a new cast iron skillet and it cute as a button, perfect for dinners for two. If you don’t have this adorable pan any oven safe pan would work. I like to make mine with cherry tomatoes and red potatoes. Tomatoes and pesto are an obvious choice, but the potatoes help make the meal nice and filling! Perfect for a #SundaySupper after a busy day!

Ingredients
  • 2 Bone-In Pork Chops (About ½ inch Thick
  • ½ Cup Pesto
  • ½ Cup Thinly Sliced Red Potatoes
  • ½ Cup Cherry Tomatoes
  • ¼ Cup Sliced Onion
  • 2 Minced Garlic Cloves
Instructions
  1. Combine all ingredients in a ziplock bag
  2. Marinate for at least 1 hour
  3. Place veggies at the bottom of a cast iron skillet
  4. Season with salt
  5. Top with pork
  6. Season pork with salt
  7. Roast at 357F for 15-25 minutes until pork is at desired doneness and potatoes are cooked

    We buy in bulk when it comes to meat. Our store had BOGO pork loin roasts. Couldn’t pass that up! I see this dish in our future with some loin chops!
