Meatloaf is always a hit in our house, but often making one meatloaf for two people leads to a lot of waste. So I’ve started making this Mini Mushroom Meatloaf instead. We each get an adorable mini meatloaf, and the mushrooms add some extra veggies and lots of flavor!

This week’s #SundaySupper is a theme I can definitely relate to, Easy Dinners for Two. Hosted by one of my dear friends, Authentically Candace, I’m am so excited to see the rest of the dinners for two my fellow tastemakers will be making! There’s only two of us in my house, so we are always looking for downsized recipes. I don’t know about you but, after a long day, the last thing I want to do is math to scale down a recipe!

This recipe actually started as part of a running joke. While I consider myself I fairly good cook, my meatloaf always fell apart. It tastes incredible, but try to cut in and it would fall into pieces! Since the meatloaf tasted so good, I did want to add more bread crumbs. My solution? Just throw the mix on top of some roasted portabellas! Not only do they add a delicious flavor, they help to hold the loaves together without adding unnecessary carbs! While mushroom meatloaf may not sound like a romantic Valentine’s dinner, what’s more romantic than delicious food! I don’t need anything fancy, I just want delicious flavors in my life!

  • ¼ Cup Olive Oil
  • ½ Teaspoon Salt
  • ¼ Teaspoon Garlic Powder
  • 1 Garlic Clove, Minced
  • 2 Teaspoon Balsamic Vinegar
  • 2 Portabella Mushroom Caps, Gills Removed
  • ½ Pound Ground Beef
  • 2 Garlic Cloves, Minced
  • 2 Tablespoons Button Mushrooms, Minced
  • 2 Tablespoons Swiss Cheese, Grated
  • 2 Tablespoons Onion, Minced
  • 2 Tablespoons Bread Crumbs, Gluten Free
  • 1 Egg
  • 1½ Teaspoons Salt
  • 1 Teaspoon Onion Powder
  • ½ Teaspoon Garlic Powder
  • 1 Teaspoon Fresh Parsley, Minced
  1. Whisk together the first 5 ingredients
  2. Brush on portabellas and roast at 435F for 5 minutes
  3. Mix together remaining ingredients
  4. Top each mushroom with half the meatloaf mix
  5. Lower over to 350F
  6. Bake for 30 minutes or until cooked through
