Ditch the takeout, everything is better when it’s homemade! My chicken satay skewers are simple to make with a delicious allergy friendly dipping sauce.
In my house food on a stick is extremely popular. I love grilling skewers when we have company over. Everyone grabbing sticks right off the fire, no dishes required. That is my idea of a perfect BBQ. Our house is small, so in door dinner parties can get crowded, but with these chicken satay skewers, you don’t have to worry about finding a seat at the table for everyone. Just grab food as your like and mingle, that’s my style!
In most restaurants, chicken satay is served with that addictive peanut sauce, perfect for dunking. However, I’ve got a new addiction of my own, SoyNut Butter from I.M Healthy! The texture mimics that of peanut butter, but I prefer the taste over the traditional stuff. Slightly salty it’s got a richness that pairs perfectly with the coconut milk and sesame oil in this dipping sauce. I love I.M. Healthy because all their products are allergy friendly. - 2 Pounds Boneless Skinless Chicken Thighs, Cubed
- 5 Cloves Garlic
- 1 Tablespoons Sesame Oil
- 3 Tablespoons Soy Sauce
- 2 Teaspoon Onion Powder
- ⅓ Cup Minced Onion
- 3 Garlic Cloves
- 1 Tablespoon Sesame Oil
- ½ Cup SoyNut Butter
- 1 Tablespoon Soy Sauce
- 1 Cup Coconut Milk
- 1 Teaspoon Sambal Oelek (More if you want spicier)
- 1 Teaspoon Apple Cider Vinegar
- Combine the first 5 ingredients and marinade for 30 minutes
- Saute onions and garlic in sesame oil
- Remove from heat, add remaining ingredients
- Season with salt
- Grill marinated chicken until cooked through
