Chicken salad is definitely a go to lunch in my house. It’s a great way to make sure you get a protein boost in the middle of the day. And it doesn’t need to be warmed up, making it easy to eat on the go. Chicken salad can get a bit dull, so I created this recipe with Indian flavors to spice up my lunch routine.
I had raita the first time when I was writing my review for A World of Flavor. Generally used to cool the palate I love the contrast of cumin and cilantro with Greek yogurt and grapes. Since I always use yogurt as the base for my chicken salads this was a no brainer for me. Just tossed in some chicken! All the spices keep this dish exciting.
Another great thing about chicken salad is there’s some many ways you can eat it. One day I’ll top a salad with it, another day a wrap, another day a sandwich. Helps me not get bored with lunch. Although there are so many flavors this dish is anything but boring!
- 2 Cups Shredded Chicken
- ½ Cup Greek Yogurt
- 1 Teaspoon Apple Cider Vinegar
- 1 Teaspoon Cumin
- 6 Chopped Dates
- ¼ Teaspoon Paprika
- 2 Tablespoons Chopped Almonds
- ¾ Cup Halved Grapes
- 1 Tablespoon Cilantro
- 1 Teaspoon Salt
- Mix all ingredients
- Store in fridge
