I remember the first Christmas I threw in my new house, I went a little over the top. I wanted everything to be just perfect, which involved purchasing over $200 of veal. What was I thinking?! After that year we switched over to throwing Christmas brunch instead of Christmas dinner. Brunch items are much cheaper and more relaxed.

Making these Chocolate Candy Cane Monkey Bread Muffins allergy friendly was easy thanks to Enjoy Life Foods. Growing up we’d sometimes make monkey bread using Bisquik, so instead of that I used Enjoy Life Foods Pancake and Waffle Mix. All of their mixes are top 8 free, so you never need to read the labels. Makes shopping so much easier! Also bonus points that they’re mixes all have 5g of plant protein, helping make these a healthier snack option! Instead of butter and cinnamon sugar I rolled these babies in some vegetable oil and crushed candy canes. The pink crushed candy not only provides that cooling peppermint flavor, it gives them a fun festive color!
- 3 Cups Enjoy Life Foods Pancake Mix
- 1½ Cups Rice Milk
- ¼ Cup Enjoy Life Food Mini Chocolate Chips
- 5 Candy Canes
- ¼ Cup Sugar
- ¼ Cup Vegetable Oil
- Mix first three ingredients until a dough forms
- Using a blender crush the candy canes with the sugar until its a powder
- Roll the dough into small balls
- Roll in oil then in candy cane powder
- Put 4-5 balls in each muffin tin
- Bake at 350F for about 20 minutes
