Growing up my mom was a great cook, she still is, just no longer cooking me dinner every night. Almost every night of my childhood there was a delicious homecooked meal, that I most likely complained about. However, my mom is not a baker and does not like sticking to a recipe. Around Christmas was the only time there was lots of baking in our house, so it was always my favorite time of the year.

I’m probably biased but my mom makes the best Christmas cookies. They perfectly soft and chewy with a hint of almond extract. In fact, I now love anything with almond extract because it reminds me of Christmas cookies! Some of my favorite Christmas memories involving rolling out cookies and listening to Christmas music. I remember one time when I was about 12 my sister and I rolled them out all by ourselves while our parents were at a Christmas party. Baking at 10PM?! I remember thinking this was the life, so rebellious!

Making Them Gluten Free

These cookies have such a simple delicate flavor that making them gluten free became a challenge. With flour as the main ingredient in mom’s recipe, many of my failed batches just came out dry and starchy, not the chewy delicious cookies I love. Instead, I thought I would turn to the experts. I swapped Better Batter All Purpose Gluten Free Flour for the AP Flour, and they actually worked perfectly on the first try! What was even better was the dough didn’t taste all starchy raw as most gluten free doughs do. As amazing as these cookies are the dough is my favorite part. I generally eat more of the dough than I bake, and thanks to Better Batter I could still do that this year!

Ingredients
  • 8 oz Cream Cheese, Softened
  • 2 Sticks Butter, Softened
  • 2 Cups Sugar
  • 1 Egg
  • 1 Teaspoon Vanilla Extract
  • ½ Teaspoon Almond Extract
  • 3½ Cup Better Batter All Purpose GF Blend
  • 1 Teaspoon Baking Soda
Instructions
  1. Cream together cream cheese, butter, and sugar,
  2. Add eggs and extract
  3. Add dry, mix until just combined
  4. Wrap in plastic wrap and chill overnight (or freeze)
  5. Roll dough to ¼ inch thick
  6. Cut in shapes and decorate
  7. Bake at 375F for 8-12 minutes

      Sorry computer shut down and I didn’t realize my comment posted. About 12 years ago I was diagnosed with Celiac during the holidays and I remember crying for hours and trying so many Christmas cookies. There weren’t nearly the options than that there are now. After years of eating gf found it it’s a sensitivity and I don’t need to be strictly gluten free but I will never forget that and we still make gluten free Christmas cookies for all of our friends.
