On of the many challenges of being gluten free involves trying to stay on budget. So many gluten free ingredients are more expensive. Gluten Free on a Budget is a great way to stick to your budget and diet.
Gluten-Free on a Budget is one of my favorite cookbooks, it’s often used in my house so I thought it was time I share it for #CricketsCookbookClub! This book is created by the blogger behind Gluten Free Frenzy and her mom. I was lucky enough to meet them both at the Gluten Free for Life Expo in St.Pete last year and was so excited to try their book.
The first recipe I try was the tomato soup, not the fanciest recipe but comfort food at it’s finest. There was a time in my life that I got a weekly grilled cheese and tomato soup from Panera, but that’s no longer an option. Making my own is so much cheaper, and of course gluten free friendly. Their recipe is so simple to make, finished with just a touch of heavy cream making it so decadent. I also used a bit of leftovers as a pasta sauce one day, so delicious!
Since this book is a mother-daughter team I was excited to try the family recipes. I was intrigued by the recipe for Mom’s Cabbage Salad just a few simple ingredients red cabbage, bacon, walnuts and feta. I swapped the walnuts from almonds, but I think it came out just as tasty. I love when a simple recipe has so many layers of flavor. I usually don’t like red cabbage, but now I love it!
Breakfast is one of my favorite meals of the day, working from home means getting to eat a big mid morning breakfast. When you’re gluten free you miss having toast to sop up those runny yolks, these potato pancakes are the perfect substitutes. I bought the shredded par cooked potatoes making this a quick and easy recipe.
Then I had to move on to the baking. The recipe I was most intrigued by was the Whatever Cake. They said you could add whatever you wanted to this cake base, so I had to put it to the test. I divided that batter into fourths and made four mini cakes: Coconut-Almond, Yellow Squash, Apple-Cinnamon, and Banana. They all came out delicious, I was so impressed. I thought the batter seemed really thick and was sure this would be a recipe fail, but was pleasantly surprised when it wasn’t. It was hard to pick a favorite, but since it’s fall I couldn’t get enough of the Apple-Cinnamon cake.
This last recipe was by far my favorite of the book, gluten free naan bread. Yes, you got that right naan bread! Naan was a favorite snack of mine, I have never made it before and never thought of ever making it gluten free. It was so easy to make, only takes a few mines to fry in a pan, and is just incredible! I fried mine in some Roasted Garlic Oil and it was out of this world amazing. Perfectly chewy and delicious, I couldn’t get enough of it. I would highly recommend getting this book and making this naan bread every day!
