Cooking for one can sometimes seem pointless, so I love single serving recipes. This 3 Ingredient Single Serving Mac and Cheese is the perfect way to satisfy your mac attack cravings. Way healthier than an easy mac cup and a lot less scary ingredients!
Mac and cheese has to been one of the most comforting foods there is! Whether I’m sad or sick mac and cheese has always been there for me! While they’re are some great boxed gluten free mac and cheese options there is one big problem with all of them: I eat the whole box. Yes, sounds gross, but on many occasions I have eaten the whole box. So I decided to make this single serving version.
This recipe is just as quick as the box mixes, but with way less weird chemical in them. I just boiled some gluten free pasta, added butter and a wedge of Laughing Cow cheese. That’s it! So easy! You could really use any of their cheese wedges, but the Swiss is my favorite.
- ½ Cup Gluten Free Elbow Pasta
- ½ Tablespoon Butter
- 1 Wedge Laughing Cow Cheese
- Cook pasta in salted water until tender
- Add butter and cheese
- Stir until melted
