September is here, which means it’s time for fall foods! Except, here in Florida, it still feels like summer. Short ribs are a perfect fall dish, but often come in a heavy stew, which no one wants in this heat. These ribs are braised in a light tomato sauce instead. Paired with some bell peppers, it’s light and comforting at the same time.

If you’re following me on instagram you know all about my amazing weekend with the Florida Beef Council and Sunday Supper. It was probably one of the best weekends ever! In addition to stuffing our faces with beef and touring farms, I also learned way more about beef that I thought I would. For example, many people complain about the amount of hormones in non organic beef; but, did you know there’s more hormones a serving of cabbage than a serving of beef?! Me either, sounds like a good reason to eat more beef to me.

Touring all the gorgeous family farms made me want to pack up everything and move to the country. Loved seeing young kids riding horses, 100 year old sour dough bread starters, and the amazing work ethnic. However, then I got home and remember how much I love my house; so instead of becoming a cattle farmer I’ll just keep on cooking beef recipes!

One of the educational sessions we attended was by Chef Dave, who gave us tips for cooking beef. For one of his recipes he marinaded steak in tomato juice, brilliant! I decided to take it a step further and braise some short ribs right in the tomato juice. Boy, am I glad I did! I combined the tomato juice with some diced canned tomatoes to create an amazing sauce. More of a broth, than a traditional short rib sauce; perfect for this time of year.

Ingredients
  • 2 Pounds Short Ribs
  • 1 Yellow Bell Pepper, Sliced
  • 1 Red Bell Pepper, Sliced
  • 1 Orange Bell Pepper, Sliced
  • 1 Small Yellow Onion, Sliced
  • 8 Garlic Cloves, Smashed
  • 1 14.5 oz Can Diced Tomatoes
  • 2 Cups Tomato Juice
  • 1 Tablespoon Salt
Instructions
  1. Season meat on both sides with salt and pepper
  2. Place in the bottom of a slow cooker
  3. Add vegetables on top
  4. Cover with can tomatoes, juice, and salt
  5. Cook on low 7-9 hours until meat is tender

    Hi Cricket,

    What an ingeniously simple recipe. Short ribs are a frugal cut of meat that’s difficult to infuse with flavor, not to mention it’s so tough your teeth will bounce off them! I love your use of tomato juice. Not only does it open up the meat to allow flavors in, the acid in the juice is a perfect tenderizer. A slow cooker is the perfect tool for making this recipe a work-night special. I love it!

    I feel ya sista’! I live in Puerto Rico and the weather is the same Summer all the time. At least Florida gets sometimes colder on Winter. Now regarding of the recipe. This looks yummy. I need a slow cooker ASAP! I’ve got so many recipes.

      That you very much! I wasn’t sure my boyfriend would eat it because he hates tomato juice, just didn’t tell him and he went back for thirds!
