By now must of your know I love getting as many vegetables in my day as possible. The more vegetables I eat the better I feel. But sometime’s that can be difficult. For me dip is the perfect way to trick myself into mindless snacking on veggies. What’s great about this recipe; you’re dipping your vegetables IN vegetables. Come on if that’s not eating healthy, what is?!

Growing up I hated char, wouldn’t eat my foods if they got any “burnt parts” on them. I used to even microwave my bagels! Now I’ve realized charring adds so much flavor! A cast iron pan makes the perfect char for this recipe. Complimenting the eggplant flavor perfectly!

Now of course this recipe isn’t 100% vegetables, I used some olive oil and Greek yogurt to help blend it smooth. But the Greek yogurt adds some protein, so I think this is a great healthy snack option! Serve with some celery and carrots or maybe pretzels. You can’t go wrong, the smokey eggplant flavors goes well with everything!

  • 1 Eggplant
  • 1 Teaspoon Salt
  • 1 Tablespoon Olive Oil
  • ½ Cup Water
  • 1 Tablespoon Olive Oil
  • 2 Tablespoon Greek Yogurt
  • 2 Tablespoon Water
  • 1 Teaspoon Salt
  1. Cut eggplant in half, season with first teaspoon of salt
  2. Heat 1 tablespoon olive oil in a cast iron pan
  3. Sear eggplant flesh side down for 5 minutes
  4. Add water and transfer to oven for 15 minutes, until tender
  5. Cool to room temperature
  6. Cut eggplant into small pieces
  7. Add to blender with remaining ingredients
  8. Puree until smooth
