Growing up whenever I was sick my mom always made me pancakes. So now they’re the ultimate comfort food for me. Bad day? Pancakes to the rescue! This recipe is perfect when you want pancakes, but not a whole batch. This quick recipe only makes two pancakes, perfect for when you want to treat yourself and no one else!
Lately I’m obsessed with trail mix, just can’t get enough! I love adding texture to all my foods and I though trail mix would be the perfect way to add some crunch to these pancakes. A few weeks ago I received my Enjoy Life Foods Dash Button. As tempting as being able to order cookies with a single press was, I knew that would be a bad choice. I could see myself having one too many glasses of wine and ordering lots of cookies, not good for trying to eat healthy. Instead I set it up for their Beach Bash Nut and Seed Mix. These pancakes are so light and fluffy the seem like a decadent treat, but they’re actually healthy. Made mostly of bananas, eggs, and oats they’re the perfect weekend breakfast. If your more generous than me you can make a bigger batch. But I think sometimes it feels good to spoil yourself with a single serving recipe!
- 1 Banana, Frozen and then Thawed
- 1 Egg
- ½ Teaspoon Baking Powder
- ½ Cup Oat Flour
- 1 Packet Enjoy Life Foods Beach Bash Trail Mix
- Combine banana, egg, baking powder, and oat flour
- Pour half batter in heated skillet, sprinkle with trail mix
- Once bubbling, flip and cook on other side about 2 minutes
- Repeat with remaining batter
