There’s no fermentation necessary with this Quick Kimchi recipe. Just a touch of hot sauce and apple cider vinegar give it all the fermented flavor. Loaded with cooling herbs, this Kimchi will become your new favorite condiment.

I remember the first time I saw kimchi, it was the first real restaurant I worked in. Service would end and around 11 pm all the cooks would make burgers and then cover them in their weird smelly stuff. I wanted nothing to do with it, no way, no how was it going near my mouth. Then a few years ago my boyfriend tricked me into eating this quick kimchi and I was hooked.

You may be asking yourself, how do you trick yourself into eating kimchi? Well, by putting in on a taco of course. I’ll eat anything in a taco shell! (Maybe not anything.. don’t quote me there.) Unlike a traditional kimchi this one doesn’t need to be fermented, just let it marinate in the fridge over night. For me what sets this kimchi apart from many others is all the herbs. I’m not a big spicy food fan, but this recipe is loaded with cilantro, basil, and mint. These three herbs perfectly balance out the spice!

I think if kimchi and coleslaw had a baby it would be this recipe. It’s got that kimchi spice and flavor of kimchi but the crunchy texture of a good slaw. You can put it on anything. You to really set up your hot dog game this summer? Add some quick kimchi! Burgers? Sandwiches? Quesadillas? You name it and it could use some quick kimchi!

Ingredients
  • ½ Head Napa Cabbage, Shredded
  • ½ Onion, Sliced
  • 3 Garlic Cloves, Sliced
  • ½ Cucumber, Sliced
  • 2 Teaspoon Salt
  • ¼ Cup Cider Vinegar
  • 2 Tablespoon Hot Sauce
  • 1 Tablespoon Cilantro, Chopped
  • 1 Tablespoon Basil, Chopped
  • 1 Tablespoon Mint, Chopped
Instructions
  1. Combine all ingredients
  2. Mix well
  3. Store in an air tight container over night
  4. Enjoy!
