If you follow food blogs you’ve seen smoothie bowls everywhere. I haven’t tried one, but I think I’ll stick to drinking my smoothies the old fashion way. When it comes to week day breakfasts I want something savory. So, I decided to make a savory breakfast bowl instead. On the weekends I make a big batch of the beans and sausage, then each morning I just crack an egg on top and throw it in the oven.

To help cut the calories in this dish I used Fresh First Italian Chicken Sausage. It provides a great fennel flavor, but less calories than pork sausage. Removed mine from the casing and browned it so I’d have small crumbles throughout the bowl. Some sausages are hard to remove from the casing, a lot of the meat sticks to the side. Luckily not Fresh First, just cut a slit down the middle and pulled the meat out.

This breakfast is so meaty that it doesn’t feel healthy. Between the chicken sausage, eggs, and beans there is definitely enough protein to start you day. What’s even better is it’s also a great source of veggies. Using onions, peppers, and tomatoes to create the sauce it’s a good way to get some veggies into your morning. I make mine as individuals for week days but you could also make the whole batch for a party. It’s such a versatile recipe you can’t go wrong.

Ingredients
  • 1 tablespoon Olive Oil
  • 3 Italian Chicken Sausages
  • 3 Garlic Cloves
  • ½ Small Onion, Diced
  • ½ Green Pepper, Diced
  • 2 Tomatoes, Diced
  • ½ cup Chicken Stock
  • 15 oz Can White Beans
  • 5 Eggs
Instructions
  1. Brown sausage crumbles in olive oil
  2. Remove sausage from pan
  3. Brown onions, garlic, and green pepper in the same pan
  4. Add the stock, beans, tomatoes, and cooked sausage
  5. Simmer for 20 minutes
  6. Season with salt
  7. Chill in the fridge until ready to eat
  8. Scoop desired amount of base into an individual oven safe dish
  9. Microwave for 45 seconds
  10. Crack and egg on top
  11. Broil on high until egg is cooked, about 5 minutes
