There are some things I think everyone in this world can agree on, and one of those things in Red Lobster’s biscuits. Cheesey, buttery, garlicy, say what you want about big chain restaurants but those biscuits are magic! Of course, being gluten free those biscuits are no longer an option. While Red Lobster does have some gluten free option, what is the point if you can’t have the biscuits?!
One thing I never imagined when I started blogging is the friends I would meet along the way. For years I learned about stranger danger on the internet and now I’m going to conferences talking to complete strangers like they’re my closest friends. My Gluten Free Miami is one of the fist bloggers I ever meet. And what do you know but she has a recipe for Copy Cat Red Lobster Biscuits. So you know I had to try these biscuits!
Her recipe calls for gluten free baking mix, generally I make my own flour mixes so I rarely have these blends in the house. However I had just received some samples from Sunshine’s Gluten Free of their all purpose gluten free flour! Because mixes are more seasoned than flours I just added 1 tablespoon of baking powder and 1 teaspoon of salt to the AP flour.
The result? Well, I felt like I was sitting in a vinyl both waiting for my lobster to be served. They’re also so easy to make! No rolling and cutting, I love a good scoop biscuit. Much less cleaning up afterwards. What I love most about these biscuits? When they’re almost fully cooked the recipe has you brush them with melted butter, garlic powder, and oregano. That step makes the biscuit. They are finger licking good, my favorite type of recipe!
