Spaghetti and Clam sauce is one of my mom’s specialty dishes. Even this year, she came to visit for my 25th birthday and made it for me. It’s so delicious I could eat it everyday. I decided to make it a low carb version by swapping the spaghetti for spaghetti squash. I cooked the spaghetti squash the day before, making this a quick 10 minute lunch!
I remember the first time I ordered clam sauce in a restaurant I was freaked out by the shells in my bowl. All I ever knew where canned clams, that’s the way my mom did it. To this day I prefer to use the canned ones, they make this dish feel like I’m sitting at my moms counter again.
While I don’t think spaghetti squash will ever satisfy a pasta craving this lunch was so delicious. The texture of the spaghetti squash was perfect with the chewy clams and savory broth. With only 5 ingredients there’s no excuse not to make this lunch!

- 1 Spaghetti Squash, Cooked
- 1 Tablespoon Olive Oil
- 3 Garlic Cloves, Minced
- 1 Teaspoon Dried Basil
- 2 6.5 oz Canned Chopped Clams
- Heat oil, saute the garlic until fragrant
- Add the squash, stir until hot
- Add basil, clams, and the juice from one of the cans
- Mix together until hot
- Top with Parmesan cheese and parsley and enjoy!
