This two ingredient recipe is a favorite of mine. It is a component often seen on my desserts when I’m working in restaurants. Well now you can make it at home and impress your friends!

At work I love to add a swoosh of this fluffy caramel on composed desserts. Like with this potato chip chocolate tart, one of my favorite desserts I’ve ever made. However, it is so good on its own, at home I often just make a big bowl of it.

When it comes to having company over I love grilling. On these hot Florida days I often think a light dessert is best. I’ll make a big bowl of whipped caramel and just put it out with some fruit for dipping. I love to make a big platter with strawberries, pineapple, maybe even some gluten free pretzels.

Whipped Caramel 3 (Small)

It also makes a great frosting. I like to put it on rich chocolate cup cakes to help lighten them up. Really you can put it on anything. As my old boss Hugh would say “You could put that on a shoe and I’d eat it.” So just make some and store it in the fridge so you can always satisfy that sweet tooth at a moments notice.

Whipped Caramel
  • ⅓ Cup Sugar
  • 1 Cup Heavy Cream
  1. Heat the cream, set aside
  2. Gradually add sugar to hot pan, stirring until the sugar caramelizes
  3. Slowly whisk in warm cream, be careful it will bubble up and steam a lot
  4. Stir until caramel dissolves into cream
  5. Chill in fridge over night
  6. Whip like whipped cream until light and fluffy
