This BBQ Grilled Zucchini is the tastiest side dish for any BBQ. Marinating the veggies gives them such a depth of flavor. Just a few minutes on the grill and you’ve got yourself a delicious and healthy side.
BBQ sauce and rubs are often featured on meats and seafood, but the doesn’t mean the veggies should be left out! Since I am my mother’s daughter, I always have to serve a vegetable with dinner. Cooking out is no exception. Zucchini is such a perfect veggie for grilling and looks beautiful with those grill marks. However, zucchini is pretty blend so why not marinate it first?
Marinating veggies in BBQ sauce can be messy, instead I love to use a rub. I used the Swine Dining Wimpy’s BBQ Rub that I was lucky enough to receive for Cook Out Week. Some rubs can be too spicy for my palate but I love the sweetness of the Wimpy’s rub. Buying the premade rub make’s this recipe so easy, just toss with a few ingredients and throw on the grill! - 3 Yellow Squash
- ¼ Cup Olive Oil
- 2 Tablespoons Whimpy's BBQ Rub
- 2 Teaspoon Salt
- 1 Teaspoon Apple Cider Vinegar
- Slice the zucchini
- Toss in ziplock bag with remaining ingredients
- Marinade for 1-3 hours
- Grill for about 5 minutes on each side
