English Muffins Goodies is a favorite family recipe of mine. These little bites of creamy, crunchy, goodness are the perfect party night.
Anyone else has a family recipe they grew up eating that they assumed everyone, everywhere ate? For me, it was English Muffin Goodies, they were something my mom was always making when we had company. These perfectly delicious little triangles were a staple in my Mom’s house, and now they’ve become a staple in mine.
This is such an easy recipe, just mix up all the ingredients and spread them on an English muffin. They hold up great in the freezer, then when you have company just cut in wedges and bake. Easy peasy! The hardest part now? Finding gluten free English muffins. I have been trying to recreate this recipe, but without that perfect muffin they weren’t coming out right. When I wrote my review for Wheat’s End Cafe I knew I had the English muffins that I could use to recreate this recipe.
By now I’m sure your wondering what is in an English Muffin Goodie. I’m going to warn you, it sounds weird, but trust me they are so delicious. If you don’t trust me, trust my mom she only makes delicious things! Generally when I serve these I don’t tell people whats in them, I’ve never had anyone not like them! The combination of shrimp and cheddar cheese may sound weird, but just try it. You’ll be pleasantly surprised how addictive these little guys are!
- 3 English Muffins, Sliced in Half
- ½ Stick Butter, Melted
- 1 41/2 Ounce Tiny Shrimp, Drained and Rinsed
- ½ Cup Spreadable Cheddar Cheese
- 1 Tablespoon Minced Onion
- ½ Teaspoon Garlic Powder
- Place English muffins on baking tray
- Mix all other ingredients
- Divide between English muffins
- Freeze until firm
- Cut into wedges
- Bake 350F for 15-20 minutes until hot and golden
