Summer definitely makes me crave all my Rhode Island comfort food. While crab cakes may dominate most of the Atlantic coast, in RI these deep fried goodies are the quintessential summer food.

The Inspiration:

When I wrote my review for A World of Flavor: Your Gluten-Free Passport I fell in love with their donut recipe. It was so fluffy and delicious, but not overly sweet. Suddenly, I had the idea to adapt this recipe into gluten free clam cakes. It could not have worked more perfectly, I dropped the sugar and added some clams and had an instant success.

While you definitely could use an ice cream scoop to make these picture perfect, scooping them with a spoon gives them the rustic charm I grew up with. All those little crunchy imperfections, really add a great texture to this clammy treat!

Clam Cakes

  • 1 Egg
  • ½ Cup Brown Rice Flour
  • ¼ Cup Cornstarch
  • ¼ Cup Tapioca Starch
  • ¼ Cup Almond Flour
  • ½ Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • ½ Teaspoon Salt
  • ½ Teaspoon Baking Powder
  • 1 Teaspoon Xanthan Gum
  • 1 6.5 oz Can Minced Clams and Their Juice
  1. Mix all ingredients until combined
  2. Chill in fridge for 30 minutes
  3. Scoop into 350F oil
  4. Fry for 8-10 minutes, until cooked through
  5. Season with salt

      I always bought them as a kid, had no idea how easy they are to make at home! I bought a bunch of clams from Costco so I can make them all summer!

      They make a great app! You can also fry them about an hour or so before having company and then just flash in them in the oven real quick. That way you’re not deep frying with company over!

    My hubby saw me looking at this and asked if I could use conch…kinda like a conch fritter…I’m pretty sure it would be just as delicious!

    Those little bites look and sound so delicious! I have a potentially silly question: where does one find canned clam? I’ve never come across any. I can only find imitation crab and I’m not a big fan of that, plus with our food allergies, I tend to stay away from any extra ingredients that aren’t needed in a food. Thanks so much!
