If I have one favorite breakfast it’s probably huevos rancheros. I love the combination of refried beans and crispy tortillas with my eggs. However, it’s definitely a belly bomber which is not usually how I like to start my day. Instead I made this lighter sandwich version, which is also so easy to make.
To help get all the traditional huevos ranchero flavor into this breakfast sandwich I started with my pepperjack biscuits. Pairing these with refried beans, egg, and more pepperjack cheese is so simple but so delicious. If you want to be even fancier add avocado or salsa to these babies. This is something I bought almost as a gag gift for my boyfriend who loves Egg McMuffins. I bought it for him one Christmas when we were staying at his parents house. - 1 Pepper Jack Biscuit
- 1 Tablespoon Refried Beans
- ½ Oz Pepper Jack Cheese
- 1 Egg
- Spread beans on bottom half of biscuit, Top with Cheese
- Place in bottom of sandwich maker
- Close bottom portion of the machine
- Crack egg and top with remaining biscuits
- Close machine and cook for 5 minutes
