When it comes to summer food corn is definitely my favorite! So sweet and refreshing and there is so much you can do with it! Growing up I longed for the days Four Town Farm would be selling their corn. Then I went to work on Martha’s Vineyard, where Morning Glory Farm’s corn was always the highlight of the summer. Moving to Florida I never imagined I would be able to find the same sweet corn. Then I got some Florida corn in my Tampa Bay Organics box, it was amazing. I am so happy I can still enjoy so many of favorite corn dishes.
I know I’m not alone in my love of Summer corn so I thought I would feature corn in this month’s recipe round up. Here are 10 of my favorite corn recipes!
- Sweet Corn Salsa– Chef Next Door
There is just something so satisfying about dipping corn chips into corn. Grilling the corn before making it into a salsa gives it such an amazing depth of flavor. This is the perfect way to change up your salsa routine.

If you’ve never had corn and cotija cheese you need to stop everything you are doing and go try some. Cotija is one of my favorite cheeses and piling onto grilled corn is simply amazing.

I love recipes that make leftovers new and exciting. This recipe really helps completely change your leftover rice. Instead of making a traditional Asian stir fry with leftover rice try this one out, trust me you wont be sorry.

Simple recipes can be the most delicious, and this is definitely an example of that. While this salad may be incredibly easy to prepare it is loaded with flavor. From the corn to the garlic to the jalapenos and cilantro this dish will keep your taste buds on their toes!

Clam chowder has always been a favorite of mine. Adding corn really helps lighten up the dish. And instead of finishing it was lots of heavy cream the creaminess comes from a splash of coconut milk. Definitely a light and filling lunch option.

Corn and leeks is a favorite combination of me, so I was so happy to see it being used in this recipe. I had never paired corn and pomegranate before this recipe, they are such a great combo. The pomegranate provides such a great pop of acidity, definitely a new go to combo for me!

As many of my readers know I’m what you might call a snack monster. And this dip is a weakness of mine. Warm, cheesy, and loaded with corn. What is not to love. The only problem is a tend to eat too much of it and then am not hungry to dinner. It’s definitely a belly bomber recipe, but it’s so delicious that it’s worth it.
