These fudgy brownies haave a secret, they’re loaded with veggies. The celery helps keep these brownies extra moist and makes them a touch healthier.
Celery Brownie 1 (Small)

Yes, that was not a typo. These brownies are made with celery! Why you might ask? After attending the Food Wine Conference and seeing all the baked goods make with celery you know I had to try it! Baking with zucchini and carrots is so common, I’ve also baked with parsnips, so you know I had to give this a try!

Celery Brownie 6 (Small)

While celery doesn’t add a huge amount of nutrients to these brownies, anywhere I can get extra veggies is great for me! This recipe is so easy, I used Enjoy Life Food Brownie Mix. While the brownie mix is delicious on it’s own, it’s super moist with the added celery. I swapped the oil for Greek yogurt as well, which made a super fudgey brownie.

Celery Brownie 5 (Small)

One thing I wasn’t expecting about this Enjoy Life mix was all the chocolate chips. These are truly a decadent treat. As much as I try to remove added sugars from my diet, I think everything in moderation is key. Plus while these brownies do have lots of sugar they’re also got 5 grams of protein, and the celery adds a bit of fiber.

  • 1 Box Enjoy Life Foods Brownie Mix
  • ¾ Cup Peeled and Grated Celery
  • ½ Cup Water
  • ¼ Cup Greek Yogurt
  1. Combine all ingredients
  2. Spread in greased 8X8" pan
  3. Bake 350F for 30-40 minutes

    Never in a million years would I have thought of adding celery to a sweet baked good. Savory, sure, like stuffing…but brownies? You’ve never led me wrong before. Great to help use up that extra celery from Thanksgiving (the BOGO sales!)
