Do you ever set out to create a recipe and have it turn into something completely different by the time you’re done? Well that’s definitely what happened here. I was trying to make blondies, but the batter seemed a little to thick so I thought I’d make them into cookies instead. What I ended up with were these light fluffy blondie bites!

These are mostly sweetened naturally only dates. However, blondies need that melty chocolate factor. I used some dark chocolate morsels from Enjoy Life Foods. There is a little sugar in these chocolate chips, but they’re gluten, dairy, and soy free so when I need chocolate they’re my go to.

Recipe Tip:

I like to cook my dates gently before blending them, this is just mainly so my blender doesn’t make a loud scary noise. However, adding the warm mixture to the dry ingredients slightly melted the chocolate giving them almost a marbled appearance. They’re not at all what I set out making, but turned into a delicious surprise; that is my favorite kind of recipe!

Ingredients
  • 1⅓ Cup Oat Flour
  • ⅓ Cup Corn Starch
  • ⅓ Cup Garbanzo Flour
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • 1 Teaspoon Xanthan Gum
  • ⅔ Cup Chocolate Chips
  • ⅔ Cup Almond Milk
  • 10 Dates
  • 2 Teaspoon Almond Butter
  • 2 Teaspoon Vanilla Extract
  • 1 Egg
Instructions
  1. Combine dry ingredients and chocolate chips
  2. Microwave almond milk and dates for 1 minute
  3. Place in blender add almond butter and vanilla
  4. Blend until smooth
  5. Pour over dry ingredients
  6. Mix well
  7. Add egg, mix until combine
  8. Scoop into small balls
  9. Bake 325F for about 10-15 minutes
