This comforting Oat Bran Bread has all the flavors of home. Unlike a tradition bran muffin, this recipe uses oat bran to make to gluten free. So everyone can enjoy one of my mom’s best recipes.

Food is so amazing, I love a recipe that can bring back such strong memories.  Growing up my mom used to make Raisin Bran muffins and they were always a favorite of mine. Usually I hated raisins  in baked goods, but for some reasons I loved these muffins! The raisins turned into little sweet pockets of goodness!

Bran muffins is one of the things I just assumed I’d never eat again after going gluten free. One day when I was scrolling through Thrive Market I saw it: oat bran! I had never even heard of it before, since the bran is a part of the wheat grain it makes perfect sense that other grains would have a bran. I was so excited, I immediately bought two bags and set out determined to recreate this favorite recipe of mine! Instead of muffins, I came up with this amazing quick bread recipe!


Of course, making it gluten free wasn’t enough for me I also had to eliminate the added sugars from the original recipe. This turned out to be incredible easy. Instead of using raisins I used a combination of dates and prunes, both of which offer an amazing sweetness. I cooked them in some water and using the cooking liquid to help sweeten the bread. The bread smells like maple syrup when it’s in the oven, mind blowing that there’s no sugar in it!

  • 1¾ Cup Oat Bran
  • 1½ Cup Skim Milk
  • 1 tsp Apple Cider Vinegar
  • ½ Cup Oil
  • ¾ Cup Water
  • ½ Cup Dates, Chopped
  • ½ Cup Prunes, Chopped
  • 2 Eggs
  • 1 Cup Oat Flour
  • ½ Cup Brown Rice Flour
  • 2 Teaspoon Baking Soda
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Salt
  • 1 Teaspoon Vanilla Extract
  • 1 Cup Applesauce
  • 1 Teaspoon Ground Cinnamon
  1. Combine oat bran, milk, vinegar, and oil
  2. Let sit for 20 minutes
  3. Mix water, dates, and prunes in small pan
  4. Bring to a boil, cook for 2 minutes
  5. Let cool slightly
  6. Add prunes, dates, and water to bran mixture
  7. Mix well
  8. Add remaining ingredients
  9. Spread batter into a greased loaf pan
  10. Bake 375F for about an hour
