Spring rolls are a new obsession of mine. Sometimes coming up with gluten free lunches can be difficult. Most gluten free sandwiches need to be warm, but with this Florida heat I rarely want a warm lunch. Spring rolls are so refreshing they’re my new go to lunch.

In the spring time BBQ flavors are always a must, but most BBQ meals are so heavy. I thought I’d lighten it up. This spring roll recipe pairs BBQ chicken with crunchy vegetables, and fresh pineapple it’s the perfect balance of light and heavy. I used some of my Whole30 BBQ sauce that I had in the freezer. I just let it thaw and tossed it with some left over chicken, so easy!

I’m very into fermented foods lately. As you know, I love making my own kombucha. In trying to add more fermented food to my diet I made this Pineapple Turmeric Sauerkraut, it’s absolutely amazing! The bright acidic flavor really cuts through the heaviness of the BBQ flavor.

I’ve started putting nutrition facts on all my recipes. While they may not be exact they’re a good general guideline for the amount of calories, sugar, fats, and fiber. However, I think making a spring roll is a very personal experience. You just put how much of each ingredient you prefer into the roll, so it’s hard to provide any nutrition facts. I’ve provided all the ingredients I used, but the amount you want is up to you, be creative! But just look at the ingredient list and you know this is a healthy choice!

Ingredients:

Rice Paper

Shredded Chicken

Whole30 BBQ Sauce

Pineapple Turmeric Sauerkraut

Cucumber, Thinly Sliced

Pineapple, Thinly Slice

Cilantro

Method:

  • Soak the rice paper in cold water until it becomes soft and pliable
  • Mix chicken and BBQ sauce, save additional for dipping if so desired
  • Spread rice paper out flat
  • Add desired ingredients, and roll like a burrito
  • If storing over night be sure to place into a greased container and cover
    • They will hold about 3 days
