I love the combination of blueberries and cottage cheese, just like in my blueberry cheesecake popsicles. The blueberries add the perfect pop of sweetness that I didn’t need to add any sugar to these healthy bars. The crust is sweetened with just a touch of applesauce. These are healthy enough for breakfast but sweet enough for dessert, so you can eat them whenever you please!

Ingredients
  • 1 Cup Oats
  • ¼ Teaspoon Salt
  • ½ Teaspoon Ground Cinnamon
  • ⅓ Cup Coconut Oil, Melted
  • ⅔ Cup Apple Sauce
  • ¾ Cup Cottage Cheese
  • 1¼ Cup Blueberries
  • 1 Teaspoon Vanilla Extract
  • 2 Teaspoon Corn Starch
Instructions
  1. Combine oats, oat flour, salt, and cinnamon
  2. Add coconut oil and applesauce, mix well
  3. Spread ¾ of the mixture in a greased 8X8 pan
  4. Top the crust with the cottage cheese
  5. Combine blueberries, vanilla and cornstarch
  6. Spread on top of the cottage cheese
  7. Top with clumps of the remaining oat mixture
  8. Bake at 350F for about 1 hour
  9. Let cool to room temperature then transfer to the fridge
  10. Once chilled completely cut the bars and enjoy
