These Paleo Chicken Nuggets are an easy three ingredient recipe. They hold up great in the freezer making frozen nuggets a thing of the past. With this healthy recipe there’s no reason to not have chicken nuggets for dinner.
I am at the halfway mark! The end is in sight! Today I tried to balance my fruit in take by adding lots of veggies to my day. I made delicious paleo chicken nuggets to add some protein to my salad. It was so good, it was hard to believe it was hard to believe it was a healthy lunch!
I wasn’t very hungry when I woke up so I started my day with a hard boiled egg and some macadamia nuts. I didn’t have as much energy as I have in days past, but I wasn’t super tired and my mind felt clear. Lunch was so quick and easy, and also helped get rid of the fried food cravings I’ve been having. Just put a few nuggets on top of a big salad with lots of veggies and some homemade dressing.
These chicken nuggets use almond flour instead of a traditional breading method, making them quite filling. Which is just what I’m looking for in a lunch. I didn’t even need a second lunch! Just had a pear and some prosciutto for a snack and then finished my day with a nice Italian sausage and lots of peppers and onions followed by a late night larabar. Definitely a day of tasty foods!
These chicken nuggets hold up great in the freezer. I just make a big batch and put them in a ziplock bag in the freezer. Perfect for quick lunches! I use Adobo Seasoning in mine because it makes everything taste better. If you don’t have any you could sub it for garlic salt, too help give the nuggets more flavor.
- 2 Chicken Breasts
- 1 Cup Almond Flour
- ½ Teaspoon Salt
- 1 Teaspoon Adobo Seasoning
- Cut the chicken into medium sized cubes
- Mix all remaining ingredients
- Roll the chicken into the almond flour mixture
- If freezing transfer to a freeze bag now
- Heat 2 tablespoons of olive oil
- Pan fry the nuggets until chicken is cooked through
- About 10 minutes on each side
