Day 6 of my whole30 and I have to say I was not as energetic as I have been the past few days. This could be from staying up so late last night or the two glasses of wine or maybe that I slept in and got a lazy start. While tired I still overall felt okay I had no headaches and no real strong sugar cravings. I’ll still count day 6 as a good whole30 day, but for me definitely not the best.
One of the nice parts of a lazy morning is, even though sometimes to prevents me from getting anything done, a big day off breakfast is always delicious. I had a fried egg, bacon, and hash browns. Usually I buy the package hash browns, but since I don’t want to eat lots of processed food on my whole30 I thought why not just make them. And from now on I will, the 30 extra seconds of grating potatoes was nothing compared to knowing what was actually in all my food. After I cooked my bacon I just tossed the grated potatoes in and cooked them til crispy and topped it with a fried egg, some dried herbs, and finishing salt. Amazing breakfast!
Since I think New Year’s Day is meant to be a lazy day we had decided to finish the finale season of Parenthood. I was so busy crying along on my couch that I did much less eating than during a usual afternoon. For a snack I had a clementine and then for lunch I had some spaghetti squash and tomato sauce. Another meat free lunch!
Dinner for day 6 was tricky because it was my first dinner outside my own home. While my boyfriend’s family is very accommodating of my gluten free needs I wouldn’t dare ask them to make a whole30 dinner; especially with three young boys having to eat the dinner too. Instead I volunteered to bring a salad and a tray of shrimp cocktail to their house. I made a salad of greens, peppers, pickled onions, oranges, and pineapple with some home made white balsamic dressing. To help make it a filling dinner I topped it with some of the shrimp from the shrimp cocktail tray to add some protein to my salad. While it was hard watching everyone with their honey ham and buttery mashed potatoes I was proud that I didn’t cave to temptation.
When I got home I had some freeze dried bananas and strawberries to end my day. I went to bed early and hopefully day 7 I will find more energy than day 6!
