These gluten free Apple Cinnamon Cookies are made with no added sugar, making them the perfect healthy snack. Loaded with ground cinnamon and ginger, there’s so much flavor you wont be missing the sugar.

So my plan of posting a new recipes everyday hasn’t work, nor has my plan of posting every other day. After a very hectic week I finally have time to sit down and write a post. And if I’m going to sit down and spend a few hours on the computer why not do it with a plate of healthy cookies. These apple cinnamon cookies are free of gluten, diary, and refined sugar! The warm cinnamon and tart apple makes these cookies the perfect way to unwind after a busy day
Since going gluten free I definitely eat more oats than ever before. But I find these cookies using oats and millet flour are more filling then traditional cookies which means I eat less of them, which is great. Even a healthy cookie if eaten in a large amounts can derail a healthy day of eating.

  • 1 Cup Instant Oats
  • ¾ Cup Millet Flour
  • ½ Teaspoon Baking Powder
  • 1 Teaspoon Ground Cinnamon
  • ½ Teaspoon Ground Ginger
  • ¼ Teaspoon Salt
  • 4 oz Apple Sauce
  • 1 Egg
  • 1 Teaspoon Vanilla Extract
  • ¼ Cup Maple Syrup
  • 1 Cup Diced Green Apple
  • 1 Teaspoon Xanthan Gum
  1. Combine dry ingredients
  2. Add wet ingredients
  3. Fold apples into dough
  4. Chill dough for at least 30 minutes
  5. Scoop into small balls
  6. Bake in 325F oven for 12-15 minutes
