This Lazy Chicken Cordon Bleu is the perfect quick dinner. Instead of stuffing and breading the chicken it simply layers on the ingredients on top. In 30 minutes you can be eating this tasty meal.
Thanksgiving is such a funny holiday. You spend days before it thinking about nothing but delicious food, spend the day of cooking away, and then when its done thinking about another meals seems almost painful. This recipe is a creation of not wanting to spend any time in the kitchen after Thanksgiving but still needing a satisfying meal. Chicken Cordon Bleu is definitely one of my favorites and this recipe makes it so easy, perfect for busy days!
For traditional Chicken Cordon Bleu the chicken is flatted out, then rolled with ham and cheese, then breaded, then pan fried. Now that takes a lot of time in the kitchen. Plus a lot of time touching raw poultry which is something I don’t particular enjoy. This recipe is really sort of a spin of from my Parmesan-Basil Crusted Chicken which comes out so crispy in delicious in the oven. I thought if the breading on that is so delicious why not simply layer the ham and cheese on top of the chicken and cover in a similar breading? And it worked! Plus by just tossing some asparagus on the sheet pan this became an easy one pan dinner!
- 2 Chicken Breasts
- 4 Sliced Deli Ham
- 2 Slices of Provolone Cheese
- ⅓ Cup Gluten Free Bread Crumbs
- 2 Tablespoons Parmesan Cheese
- 2 Tablespoons Minced Onion
- ½ Teaspoon Garlic Powder
- 1 Teaspoon Salt
- 1 Teaspoon Parsley
- 1 Tablespoon Olive Oil
- Season chicken lightly with salt
- Top with ham then cheese
- Mix all remaining ingredients
- Top chicken with crumb mixture
- Bake at 350F for 30-40 minutes until chicken is cooked through
