Pork with Balsamic Glaze

Believe it or not but this was actually my first time using a slow cooker. I have been saving slow cooker recipes for years but never actual bought a slow cooker. Most of my braising I do in a small dutch oven from a garage sale. While handy, I find with an electric stove I can never regulate the temperature correctly. So when my boyfriend said he could get a slow cooker with credit card points I was super excited. It’s here, it’s red, and it’s beautiful! This recipe was the first one I’ve made but wont be the last!

I guess most of my favorite recipes involve chicken, but I swear I eat more than just chicken. Pork tenderloin is something we always have in the freezer while slightly too big for two people braising it makes for delicious leftovers that never go to waste. Plus its got less fat than braising a pork shoulder so it makes dinner feel a bit healthier.59312-balsamic2bpork2b7

This recipe is so easy, just chop up some onions throw your pork on top and then do whatever you want for 5 hours. And the glaze is made in the microwave when you’re ready to eat, how amazing is that?! The balsamic vinegar is so tangy but combined with the honey and soy sauce its a delicious sauce for the tender pork. I paired my pork with a little ricotta and caprese salad because you can never have too much cheese. Or top it with some marinated tomatoes, yum!
