I long for pasta’s in creamy white sauce find myself craving foods I never eat liked until I couldn’t have them like a cheese steak sandwich. This one pan pasta is a delicious way to feed the desire for a comforting meal!
I recently discovered a gluten free cream of chicken soup from Pacific that has been a total life saver. I buy a bunch of them from Thrive Market that way I always have them on hand for casseroles and soups. Growing up one of my favorite meals was chicken Alfredo, while still a delicious choice I tried to take my old favorite and make it a bit healthier. Instead of lots of heavy cream and cheese I cooked that pasta in a combination of water and cream of chicken soup and just topped it was a bit of Parmesan cheese. This provided all the creaminess I had been wanting but way less of the fat. Then I added a touch of pesto because herbs make everything better!
One Pan Creamy Pesto Pasta

- 1 Cup Gluten Free Pasta
- 1 Box Pacific Cream of Chicken Soup
- 1 Cup Water
- 1 Cup Shredded Chicken
- ½ Cup Pesto
- To Taste Parmesan Cheese
- Combine pasta, cream of chicken, water, and shredded chicken in a medium pot
- Bring to a boil then lower to a simmer
- Stirring occasionally cook the mixture for about 25 minutes or until pasta is cooked
- Add pesto and stir to combine
- Divide between two bowls and sprinkle with cheese
