I feel like where ever I look on the internet these days there are recipes for chia pudding. I keep trying them but I can’t get over the texture. I can throw a handful of seeds in my water bottle and drink them all day but as soon as a go to eat them, yuck they’re so slimy. But this recipe came out so fluffy and delicious, it was almost like a mousse!

The Secret Ingredient:

The combination of coconut milk and pumpkin puree make a perfectly smooth, creamy texture and will keep you wanting more. The real secret ingredient that makes this so addictive is one you may not think would work; curry powder! Sounds weird? Slightly, but the smokey spice completes the chocolate and pumpkin so perfectly. Trust me, don’t leave it out!

This recipe could not be any simpler, just mix together all the ingredients and let sit in the fridge. I made exactly enough for one portion, the perfect make ahead breakfast. You could easily multiply the recipe to make more portions.

  • 2 Tablespoons Chia Seeds
  • ½ Cup Coconut Milk
  • 1 Tablespoon Pumpkin Puree
  • 1 Tablespoon Cocoa Powder
  • 1 Teaspoon Maple Syrup
  • ½ Teaspoon Ground Cinnamon
  • ½ Teaspoon Curry Powder
  1. Combine all ingredients in a small bowl
  2. Stir until combined
  3. Rest in a fridge for at least two hours or overnight
