Marinated tomatoes with cottage cheese is the perfect afternoon snack. This savory treat is full of flavor, but so easy to make!
I know what you’re thinking, why would I ever put tomatoes with cottage cheese? Well think about it tomatoes and mozzarella? Best friends! Tomatoes and goat cheese? Soul mates! Tomatoes and blue cheese? A sophisticated pair! So why wouldn’t you and them with the creamy, salty, protein filled goodness that is cottage cheese?
That being said I cannot take any of the credit for deciding to pair the two. I currently work for the most generous, kindhearted woman in the whole world Jeanne Taylor and this is one of her favorite snacks. Many mornings I come into work to find her making a lunch of cottage cheese, tomatoes, and red onion. I decided to marinate my tomatoes overnight that way they are juicy and delicious!
Cottage cheese is a great way to fill up with some protein for lunch. Just four ounces of full fat cottage cheese has 12 grams of protein. While you can find lower fat cottage cheese they often add sugar to those to compensate for the lack of fat. I say keep the fat ditch the sugar, but hey you’re an adult do what you want!
- Half the cherry tomatoes
- Toss together all ingredients except the cottage cheese
- Rest overnight or for 12 hours
- Serve over cottage cheese and enjoy!
