Lately I love anything in popsicle form. They are cute and practical, what is better than that?! These blueberry cheesecake popsicles are so easy to make with only three healthy ingredients you could eat them for breakfast!

Cottage cheese is by far one of my favorite foods, yes I know this is strange. But I am constantly craving cottage cheese. Which is why I became over ambitious and bought a giant vat of cottage cheese thinking I would eat it all. Well.. by the end of the week I’m sitting with this cottage cheese staring at the expiration date thinking how am I going to eat all of this? That’s when I got the idea for this recipe.

Ideally in my head I wanted this to be a two ingredient recipe. I know when I look for recipes online I always lean towards ones with less ingredients. But my blender was far too cranky to blend the mixture smooth so I added some skim milk to my popsicles. So now these are my super quick three ingredient cheesecake popsicles!

As you can see I took this picture before I realized I would need to add milk and then never retook the picture, opps! But seriously, look how large that container of cottage cheese is!

  • 1 Pint Blueberries
  • ½ cup Skim Milk
  • 1½ cup Cottage Cheese
  1. Blend all ingredients until smooth
  2. Pan spray popsicle molds and divide mixture evenly between six molds
  3. Freeze overnight or for about 12 hours
  4. Unmold and enjoy!
