I’ll admit it, I’m the stereotypical girl raised in New England who loves fall. The changing colors in the leaves is nice, but what I’m talking about it the FOOD. Fall food has all the best flavors; apples, pumpkin, spice cake! However, since it’s technically still August I’m going to start off my fall baking with apples; because, they’re really an all year food now a days.

Growing up in Rhode Island going apple picking was always a fall must. Every year we’d pack up the family and dog and drive to pick apples right from the tree; get fresh apple cider and sometimes if we were lucky, cider donuts. As a kid empire apples were my favorite; however, they lost some appeal after learning they were not actually called Vampire Apples, which I is still think it a suitable name since they’re blood red. Lately though I can’t get enough of green apples, I love their tartness!

I make my apple butter a little different than I traditional apple butter. I find when you cook a green apple down for hours it looses all the tartness that makes it such a great apple. Also many apple butter are set with pectin, while a great gelling agent you need a certain amount of sugar in order for your pectin to work. I’m trying to be healthy here, I don’t want to add a ton of sugar to anything! Agar has become my new favorite ingredient, is so easy to use and makes beautiful purees and jams. Agar doesn’t need any sugar to set and is derived from seaweed so its completely vegan as well unlike gelatin. I usually buy mine from Amazon. they may carry in specialty markets, but I’ve never looked; Amazon Prime is my best friend. Hopefully this recipe will be a good way for you to discover the wonders of agar for this super simple apple butter! This apple butter only cooks for about 5 minutes and there’s only a dash of honey in  it so what you get is amazing apple flavor with no reason to feel guilty slathering it on top of everything in your sight.

  • 7 Apples
  • 1 Lemon
  • 2 tablespoons Honey
  • ¾ cup Water
  • 1½ teaspoon Agar
  • ½ teaspoon Apple Cider Vinegar
  1. Add water and the juice of the lemon to a small pot
  2. Peel the apples and grate with the largest side of a cheese grater, adding them to the water as soon as they are finished to prevent browning
  3. Add honey and agar to pot
  4. Bring to a boil while stirring constantly
  5. Pour mixture into a greased loaf pan
  6. Place in fridge and let chill for 45 minutes or until the mixture is set
  7. Add the apple mixture to a blender with the apple cider vinegar and mix until smooth
